Chow Chow Bath - Khara Bath | Kesari Bath

Chow Chow bath is a popular breakfast dish from the South Indian state of Karnataka.  It consists of two dishes - a spicy vegetable mixture called "Khara Bath/Upma" and a sweet semolina porridge called "Kesari Bath".

Ingredients For Khara Bath:  



  • 1 cup medium rava | semolina 

  • 1/4 oil  

  • 1/2 teaspoon mustard seeds  

  • 1 teaspoon channa dal  

  • 1 teaspoon urad dal  

  • Cashews  

  • Curry Leaves  

  • 1 teaspoon ginger 

  • 5 - 6 green chillies  

  • 1 large onion  

  • 1 large tomato 

  • 2 1/2 cups boiling water (Including cooked vegetable water) 

  • Salt to taste 

  • 1 - 1 1/2 cups cooked vegetables (carrot, bean & peas) 

  • 1/2 teaspoon turmeric powder  

  • 1 tablespoon vangi bath powder  

  • 1 tablespoon ghee 

  • 3 - 4 tablespoons fresh coconut  

  • 3 tablespoons lemon juice 

  • Coriander  



Method: 



  1. Heat the oil in a pan, add mustard seeds and allow them to splatter. 

  2. Add the channa and urad dal, and roast until golden brown. 

  3. Next, add cashews and roast until golden brown. 

  4. Now add curry leaves to it and sauté. 

  5. Add ginger, chillies and sauté. 

  6. Add onion sauté for 2-3 minutes. 

  7. Once the onion is done, add, rava/semolina and roast it for 2 - 3 minutes. 

  8. Next, add tomato and mix, then add salt and mix. 

  9. Add precooked vegetables, turmeric powder, 2 cups boiling water, 1/2 cup cooked vegetable water and lemon juice. 

  10. Mix well on medium heat. 

  11. The rava will absorb water, swell and get cooked. 

  12. Cover the lid and cook for 2 to 3 minutes or until thick. 

  13. Stir it again, cover and cook for 2 to 3 minutes on low heat or until done.   

  14. Add melted ghee, fresh coconut, and coriander and mix well. 

  15. Serve hot, garnished with cashews and coriander.   



Ingredients For Kesari Bath: 



  • 1/2 cup medium or fine rava | semolina 

  • 2 tablespoons ghee 

  • 4 tablespoons oil 

  • Raisins 

  • Cashews 

  • 1/2 cup milk 

  • 1/2 cup water 

  • 1/4 - 1/2 teaspoon orange food colour 

  • 1/4 - 1/3 cup sugar 

  • 1/2 teaspoon cardamom powder  



Method: 



  1. Heat ghee  and oil together, Add cashews and raisins, and roast on low heat until golden brown. 

  2. Now, add the rava and roast until it turns aromatic. 

  3. Next, add water, milk and food colouring. 

  4. Mix continuously till the rava absorbs liquid and no lumps are formed.  

  5. Add sugar and cardamom powder. 

  6. Stir well till the sugar dissolves. 

  7. Cover and simmer for 2 - 3 minutes or until thick, or it separates from the pan. 

  8. Serve a kesari bath as a dessert.
